Green Pea Tendrils
Pea tendrils add a unique tender and buttery texture while the stems have the same familiar crunch and mildly sweet flavor of full grown peas.
From the abundance of Vitamin C and B (seven times the vitamin C of blueberries and eight times the Vitamin B9 = folate of bean sprouts) pea shoots are an excellent source of fiber, protein, and iron. They contain also phytoestrogens with cancer-fighting properties.
